Easy Veggie Soup




Veggie and bean soup

Ingredients

1 Rutabaga

1 large yellow onion

3-5 Carrots

3-5 Celery ribs 

1 can Garbanzo beans

2 Cups Cabbage

2 - 32 oz Chicken or vegetable broth

4 Tbsp bone broth powder ( optional )

Salt and pepper

1/4 cup fresh chopped parsley

2 tbsp dried oregano

1 Tbsp Olive oil

Directions

Chop carrots, celery and onion into small cubes. Clean and chop parsley. Peel and cut rutabaga into 1 inch cubes.

In a large pot, heat oil. Add in Onions and a pinch of salt and saute for 3 mins until onions are translucent. Add in carrots, celery , parsley, oregano, salt and pepper.  Cook for an additional 3 mins.

Add chicken broth, bone broth powder, rutabaga and beans to the pot and bring to a boil, reduce heat and simmer for 15 minutes.

Add in cabbage and cook for about 2 mins or until cabbage softens. Serve and enjoy!
